  • 1 cup of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 1/4 cup of plain yogurt
  • 1/4 cup of warm water (may not need all)
  • 2 tablespoons of olive oil
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of crumbled feta cheese
  • 2 tablespoons of za’atar spice blend
  • 1 egg (for egg wash)
  • Sesame seeds (optional, for garnish)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Whisk together to aerate.
  2. Add the yogurt and olive oil to the dry mixture. Mix with a fork or your hands until combined.
  3. Gradually add warm water, mixing until a soft dough forms. You may not need all the water.
  4. Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Shape the dough into a ball, place it in a greased bowl, cover, and let it rest for 30 minutes.
  6. In a medium bowl, combine shredded mozzarella and crumbled feta cheese.
  7. Add the za’atar spice blend and mix until well combined. Optionally, drizzle with olive oil for extra flavor.
  8. After resting, lightly flour your work surface and roll the dough into a rectangle about 1/4 inch thick.
  9. Cut the dough into rectangles, approximately 3 inches wide and 6 inches long.
  10. Place a spoonful of the cheese mixture in the center of each rectangle.
  11. Roll the dough over the filling, tucking in the sides to create a neat roll.
  12. Place the rolls seam-side down on a parchment-lined baking sheet, leaving space between each.
  13. Preheat your oven to 375°F (190°C).
  14. Beat the egg in a small bowl and brush the tops of each roll with the egg wash. Optionally, sprinkle sesame seeds on top.
  15. Bake for 20-25 minutes, or until golden brown and puffed up. Keep an eye on them to prevent over-browning.
