Za’atar Cheese Rolls are soft, fluffy dough filled with a savory blend of mozzarella and feta cheese, enhanced with aromatic za’atar spice. These golden, baked rolls make for a perfect snack or appetizer, sure to impress with their delicious flavor and appealing presentation.

- 1 cup of all-purpose flour
- 1/2 teaspoon of salt
- 1/2 teaspoon of baking powder
- 1/4 cup of plain yogurt
- 1/4 cup of warm water (may not need all)
- 2 tablespoons of olive oil
- 1 cup of shredded mozzarella cheese
- 1/2 cup of crumbled feta cheese
- 2 tablespoons of za’atar spice blend
- 1 egg (for egg wash)
- Sesame seeds (optional, for garnish)
Instructions
- In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Whisk together to aerate.
- Add the yogurt and olive oil to the dry mixture. Mix with a fork or your hands until combined.
- Gradually add warm water, mixing until a soft dough forms. You may not need all the water.
- Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Shape the dough into a ball, place it in a greased bowl, cover, and let it rest for 30 minutes.
- In a medium bowl, combine shredded mozzarella and crumbled feta cheese.
- Add the za’atar spice blend and mix until well combined. Optionally, drizzle with olive oil for extra flavor.
- After resting, lightly flour your work surface and roll the dough into a rectangle about 1/4 inch thick.
- Cut the dough into rectangles, approximately 3 inches wide and 6 inches long.
- Place a spoonful of the cheese mixture in the center of each rectangle.
- Roll the dough over the filling, tucking in the sides to create a neat roll.
- Place the rolls seam-side down on a parchment-lined baking sheet, leaving space between each.
- Preheat your oven to 375°F (190°C).
- Beat the egg in a small bowl and brush the tops of each roll with the egg wash. Optionally, sprinkle sesame seeds on top.
- Bake for 20-25 minutes, or until golden brown and puffed up. Keep an eye on them to prevent over-browning.

- Ensure the dough is not too sticky by adding water gradually.
- You can customize the filling by adding herbs or spices of your choice.
- These rolls are best served warm but can be stored in an airtight container for a few days.
