  • 1 cup fresh strawberries, hulled
  • 1 medium apple, cored and chopped (preferably Fuji or Honeycrisp)
  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 cup Greek yogurt
  • 1 tablespoon chia seeds (optional)
  • Ice cubes (about 1 cup, or to your desired thickness)

Instructions

  1. Peel the ripe banana and slice it into smaller pieces.
  2. Rinse the strawberries under cold water, hull them, and slice in half or quarter if large.
  3. Wash the apple, core it, and chop into small chunks, leaving the skin on for added fiber.
  4. Measure out chia seeds if using.
  5. In a blender, add the banana, strawberries, apple chunks, almond milk, Greek yogurt, and honey or maple syrup (if using).
  6. Add about a cup of ice cubes.
  7. Blend on low speed, gradually increasing to high speed for about 30-60 seconds until smooth. Scrape down the sides if necessary.
  8. If the smoothie is too thick, add more almond milk and blend again. If too thin, add more ice or fruit.
  9. Taste the smoothie and adjust sweetness with more honey or maple syrup if needed. A squeeze of lemon juice can add tartness.
  10. Blend again if you’ve added anything.
  11. Pour the smoothie into a glass or bowl. Garnish with slices of fresh fruit or a sprinkle of chia seeds.
