Instructions
- In a medium-sized mixing bowl, combine the soy sauce, honey, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes (if using). Whisk until well combined and the honey is fully dissolved.
- Season the marinade with a pinch of salt and pepper. Taste and adjust the seasoning if necessary.
- Place the chicken thighs in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag tightly and massage the marinade into the chicken.
- Refrigerate for at least 30 minutes, preferably 2 to 4 hours.
- Remove the chicken from the refrigerator and let it sit at room temperature for about 15 minutes.
- Preheat your oven to 400°F (200°C).
