Instructions

  1. If using sponge cake, bake according to your favorite recipe or use a store-bought version. Allow it to cool completely before slicing into 1-inch cubes. If using ladyfingers, break them into halves or thirds.
  2. Pour the sherry over the sponge cake cubes or ladyfingers, ensuring they soak evenly for about 10-15 minutes.
  3. Rinse the mixed berries under cold water. Slice strawberries into halves or quarters as needed, then set aside to drain.
  4. For homemade custard, whisk together 4 egg yolks, 1/2 cup of granulated sugar, and 2 cups of milk in a saucepan over medium heat. Stir continuously until thickened. Remove from heat and let cool. If using store-bought custard, pour it into a bowl and set aside.
  5. In a large mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Whip on medium-high speed until soft peaks form, being careful not to over-whip.
  6. In a trifle dish, start with a layer of soaked sponge cake or ladyfingers. Add a layer of mixed berries, followed by a layer of custard, and then a layer of whipped cream. Repeat the layers until ingredients are used up, finishing with whipped cream on top.
  7. Cover the assembled trifle with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight.
  8. Before serving, garnish with additional mixed berries and fresh mint leaves. Scoop out portions, ensuring each serving has a bit of every layer, and enjoy!
