Ingredients

Scale
  • 1 pound breakfast sausage (mild or spicy)
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1 cup frozen hash browns (optional)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the breakfast sausage, breaking it into smaller pieces until browned and no longer pink (about 5-7 minutes). Drain excess grease.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. If needed, microwave for 15-20 seconds to soften.
  4. Add shredded cheddar and mozzarella cheeses to the cream cheese and mix until well combined.
  5. Crack in the eggs and pour in the milk. Add garlic powder, onion powder, salt, black pepper, and paprika (if using). Mix until well combined.
  6. Fold in the cooked sausage and frozen hash browns (if using) until evenly coated.
  7. Grease a 9×13-inch baking dish and pour the mixture in, spreading it evenly.
  8. Bake in the preheated oven for 30-35 minutes, until edges are golden brown and center is set. Broil for an additional 2-3 minutes for extra color, if desired.
  9. Let the casserole cool for 5-10 minutes before cutting into squares or rectangles.
  10. Garnish with fresh parsley or chives if desired, and serve warm.
