Instructions

  1. Thoroughly wash the plums, cucumber, and lemon under cold running water to remove any pesticides or dirt.
  2. Cut the plums in half, remove the pit, and slice each half into thin wedges.
  3. If using fresh thyme, rinse the leaves and strip them from the stems. If using dried thyme, skip this step.
  4. Slice the cucumber into thin rounds and the lemon into thin slices.
  5. In a large pitcher, combine the sliced plums, thyme leaves, cucumber slices (if using), and lemon slices.
  6. Pour 8 cups of filtered water over the fruit and herbs, ensuring all ingredients are submerged.
  7. Cover the pitcher and refrigerate for at least 2 hours, or overnight for best flavor.
