Description

These No-Bake Chocolate Peanut Butter Oatmeal Cookies are a deliciously simple treat that combines chocolate, peanut butter, and oats. Ready in just 45 minutes, they offer a satisfying sweet fix without the need for baking, making them perfect for any occasion!

Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 3 cups quick-cooking oats
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the granulated sugar, unsweetened cocoa powder, milk, and unsalted butter. Measure each ingredient accurately for the best results.
  2. Place the saucepan over medium heat. Stir the mixture continuously with a wooden spoon or spatula to ensure that the sugar dissolves completely and the cocoa powder is well incorporated.
  3. Once the mixture comes to a rolling boil, stop stirring and let it boil for exactly 1 minute. This step is crucial for achieving the right texture for the cookies.
  4. After 1 minute of boiling, remove the saucepan from the heat. Allow it to cool for about 2 minutes, but do not let it cool completely.
  5. While the mixture is still warm, add the creamy peanut butter to the saucepan. Stir until the peanut butter is fully melted and combined with the chocolate mixture.
  6. Next, add the quick-cooking oats to the saucepan. Stir well to ensure that all the oats are evenly coated with the chocolate-peanut butter mixture.
  7. Add the vanilla extract and a pinch of salt to the mixture. Stir again to combine all the ingredients thoroughly. The mixture should be thick and sticky at this point.
  8. Prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.
  9. Using a tablespoon or a cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Once all the mixture has been portioned out, use the back of the spoon to flatten each cookie slightly if desired for a more uniform shape.
  11. Allow the cookies to sit at room temperature for about 30 minutes to 1 hour, or until they are set and firm to the touch. Alternatively, place them in the refrigerator to speed up the setting process.
  12. Once the cookies are set, carefully peel them off the parchment paper or silicone mat.
  13. Transfer the cookies to an airtight container for storage. They can be kept at room temperature for up to a week or in the refrigerator for longer freshness.

Notes

  • For a richer flavor, consider adding a pinch of cinnamon or espresso powder.
  • Mix in chopped nuts or chocolate chips for a chunkier cookie.
