Description
This creamy Corn Cheese dish combines sweet corn and mozzarella with a hint of spice, making it a perfect side or appetizer. Baked until bubbly and golden, it pairs wonderfully with Korean BBQ or can be enjoyed with chips.
Ingredients
Scale
- 2 cups canned corn (drained) or 2 cups fresh corn kernels
- 1 cup shredded mozzarella cheese
- 1/2 cup mayonnaise
- 1 tablespoon sugar
- 1 tablespoon butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup chopped green onions (optional, for garnish)
- 1 tablespoon gochugaru (Korean red pepper flakes, optional for spice)
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
- Start by preparing your corn. If using fresh corn, remove the kernels from the cob using a sharp knife. If using canned corn, simply drain the liquid and set aside.
- In a large mixing bowl, combine the corn with the mayonnaise, sugar, salt, black pepper, garlic powder, onion powder, and gochugaru (if using). Stir well until all ingredients are evenly mixed.
- Add in the shredded mozzarella cheese, reserving a small handful for topping later. Mix until the cheese is well incorporated into the corn mixture.
- Preheat your oven to 375°F (190°C).
- In a medium-sized oven-safe skillet or baking dish, melt the butter over medium heat, coating the bottom evenly.
- Once the butter is melted, pour the corn mixture into the skillet. Spread it out evenly with a spatula.
- Sprinkle the reserved mozzarella cheese on top of the corn mixture.
- Place the skillet in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
- Once the corn cheese is out of the oven, let it cool for a few minutes.
- Garnish with chopped green onions and sesame seeds.
- Serve warm as a side dish or appetizer.
Notes
- For a richer flavor, consider adding cooked bacon bits or diced ham to the corn mixture.
- If you prefer a spicier version, increase the amount of gochugaru or add a dash of hot sauce.
- Experiment with different types of cheese like cheddar or pepper jack for a unique twist.
- For a vegetarian option, ensure that the mayonnaise used is egg-free or vegan.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
