Korean Corn Cheese Dish: A Deliciously Cheesy Delight You Must Try

  • Author: Maria
  • Total Time: 40 minutes
  • Yield: 4-6 servings 1x

Description

This creamy Corn Cheese dish combines sweet corn and mozzarella with a hint of spice, making it a perfect side or appetizer. Baked until bubbly and golden, it pairs wonderfully with Korean BBQ or can be enjoyed with chips.

Ingredients

Scale
  • 2 cups canned corn (drained) or 2 cups fresh corn kernels
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon sugar
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup chopped green onions (optional, for garnish)
  • 1 tablespoon gochugaru (Korean red pepper flakes, optional for spice)
  • 1 tablespoon sesame seeds (optional, for garnish)

Instructions

  1. Start by preparing your corn. If using fresh corn, remove the kernels from the cob using a sharp knife. If using canned corn, simply drain the liquid and set aside.
  2. In a large mixing bowl, combine the corn with the mayonnaise, sugar, salt, black pepper, garlic powder, onion powder, and gochugaru (if using). Stir well until all ingredients are evenly mixed.
  3. Add in the shredded mozzarella cheese, reserving a small handful for topping later. Mix until the cheese is well incorporated into the corn mixture.
  4. Preheat your oven to 375°F (190°C).
  5. In a medium-sized oven-safe skillet or baking dish, melt the butter over medium heat, coating the bottom evenly.
  6. Once the butter is melted, pour the corn mixture into the skillet. Spread it out evenly with a spatula.
  7. Sprinkle the reserved mozzarella cheese on top of the corn mixture.
  8. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
  9. Once the corn cheese is out of the oven, let it cool for a few minutes.
  10. Garnish with chopped green onions and sesame seeds.
  11. Serve warm as a side dish or appetizer.

Notes

  • For a richer flavor, consider adding cooked bacon bits or diced ham to the corn mixture.
  • If you prefer a spicier version, increase the amount of gochugaru or add a dash of hot sauce.
  • Experiment with different types of cheese like cheddar or pepper jack for a unique twist.
  • For a vegetarian option, ensure that the mayonnaise used is egg-free or vegan.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
