- 4 chicken thighs (bone-in, skin-on)
- 1 cup long-grain white rice
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 cups chicken broth
- 1 cup water
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken thighs dry with paper towels to achieve crispy skin.
- Season both sides of the chicken thighs generously with salt, pepper, and paprika, rubbing the seasoning into the skin.
- In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for 5-7 minutes until golden brown and crispy.
- Flip the chicken thighs and sear the other side for an additional 3-4 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for 3-4 minutes until translucent.
- Add the minced garlic and grated ginger, sautéing for another 1-2 minutes until fragrant.
- Stir in the rice, toasting it slightly for 2-3 minutes while stirring frequently.
- Pour in the chicken broth and water, followed by the soy sauce and dried thyme. Stir well to combine.
- Bring to a gentle boil, then reduce the heat to low and simmer for 5 minutes.
- Place the seared chicken thighs on top of the rice, skin-side up.
- Cover the skillet with a tight-fitting lid or aluminum foil.
- Transfer to the preheated oven and bake for 30-35 minutes until the chicken is cooked through and the rice is tender.
- Check the chicken for doneness; it should reach an internal temperature of 165°F (75°C).
- If the rice is too wet, return the skillet to the oven uncovered for an additional 5-10 minutes.
- Let the skillet rest for 5 minutes before serving.
- Fluff the rice with a fork to separate the grains.
- Garnish with freshly chopped parsley before serving.
