  • 4 chicken thighs (bone-in, skin-on)
  • 1 cup long-grain white rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 cups chicken broth
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry with paper towels to achieve crispy skin.
  3. Season both sides of the chicken thighs generously with salt, pepper, and paprika, rubbing the seasoning into the skin.
  4. In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for 5-7 minutes until golden brown and crispy.
  5. Flip the chicken thighs and sear the other side for an additional 3-4 minutes. Remove the chicken from the skillet and set aside.
  6. In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for 3-4 minutes until translucent.
  7. Add the minced garlic and grated ginger, sautéing for another 1-2 minutes until fragrant.
  8. Stir in the rice, toasting it slightly for 2-3 minutes while stirring frequently.
  9. Pour in the chicken broth and water, followed by the soy sauce and dried thyme. Stir well to combine.
  10. Bring to a gentle boil, then reduce the heat to low and simmer for 5 minutes.
  11. Place the seared chicken thighs on top of the rice, skin-side up.
  12. Cover the skillet with a tight-fitting lid or aluminum foil.
  13. Transfer to the preheated oven and bake for 30-35 minutes until the chicken is cooked through and the rice is tender.
  14. Check the chicken for doneness; it should reach an internal temperature of 165°F (75°C).
  15. If the rice is too wet, return the skillet to the oven uncovered for an additional 5-10 minutes.
  16. Let the skillet rest for 5 minutes before serving.
  17. Fluff the rice with a fork to separate the grains.
  18. Garnish with freshly chopped parsley before serving.
