- 4 boneless, skinless chicken breasts
- 8 slices of ham (preferably thinly sliced)
- 8 slices of Swiss cheese
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped (for garnish)
- Cooking oil (for frying)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
- Lay out the pounded chicken breasts. On each breast, place 2 slices of ham and 2 slices of Swiss cheese.
- Carefully roll each chicken breast tightly, tucking in the sides as you roll. Use toothpicks to secure the ends if necessary.
- Set the rolled chicken aside while you prepare the breading station.
- In a shallow dish, place the flour. In a second dish, beat the eggs. In a third dish, combine the breadcrumbs with a pinch of salt and pepper.
- Coat each rolled chicken breast in flour, dip in the beaten eggs, and then roll in the breadcrumb mixture.
- In a large skillet, heat about 1/4 inch of cooking oil over medium heat.
- Carefully place the breaded chicken rolls in the hot oil and cook for about 4-5 minutes on each side until golden brown.
- Transfer the browned chicken rolls to a baking dish.
- Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
- In a medium bowl, combine the mayonnaise, sour cream, Dijon mustard, and lemon juice. Mix until smooth.
- Adjust seasoning with salt and pepper to taste.
- Once the chicken is done baking, let it rest for a few minutes before serving.
