  • 2 large eggs

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Cooking oil (for frying)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/2 inch.
  3. Season both sides of the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
  4. Lay out the pounded chicken breasts. On each breast, place 2 slices of ham and 2 slices of Swiss cheese.
  5. Carefully roll each chicken breast tightly, tucking in the sides as you roll. Use toothpicks to secure the ends if necessary.
  6. Set the rolled chicken aside while you prepare the breading station.
  7. In a shallow dish, place the flour. In a second dish, beat the eggs. In a third dish, combine the breadcrumbs with a pinch of salt and pepper.
  8. Coat each rolled chicken breast in flour, dip in the beaten eggs, and then roll in the breadcrumb mixture.
  9. In a large skillet, heat about 1/4 inch of cooking oil over medium heat.
  10. Carefully place the breaded chicken rolls in the hot oil and cook for about 4-5 minutes on each side until golden brown.
  11. Transfer the browned chicken rolls to a baking dish.
  12. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  13. In a medium bowl, combine the mayonnaise, sour cream, Dijon mustard, and lemon juice. Mix until smooth.
  14. Adjust seasoning with salt and pepper to taste.
  15. Once the chicken is done baking, let it rest for a few minutes before serving.
