  • 1/4 cup granulated sugar (for coating)

Instructions

  1. In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Heat over medium until boiling, stirring occasionally.
  2. Remove from heat and add all-purpose flour at once. Stir vigorously until a ball forms and pulls away from the pan (1-2 minutes).
  3. Let the dough cool for about 5 minutes.
  4. Add eggs one at a time, mixing well after each addition until smooth. Stir in vanilla extract.
  5. Preheat oven to 400°F (200°C).
  6. Line a baking sheet with parchment paper.
  7. Fill a piping bag fitted with a large star tip with the churro dough.
  8. Pipe the dough onto the baking sheet in strips, about 4-6 inches long, leaving space between each.
  9. Trim the ends with scissors for a clean finish (optional).
  10. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed. Watch closely to avoid over-baking.
  11. Let cool on the baking sheet for about 5 minutes.
  12. In a small bowl, mix granulated sugar and ground cinnamon.
  13. Roll each churro in the cinnamon-sugar mixture until fully coated.
